Kombucha is a mildly fizzy, fermented drink made from sweetened tea and a specific culture known as a ‘SCOBY’, short for a ‘symbiotic culture of bacteria and yeasts’. The bacteria and yeasts in the scoby convert the sugar into ethanol and acetic acid. Kombucha is thought to have originated in China and by the early 20th century it had spread to Russia, then other parts of Eastern Europe and Germany. Kombucha is now homebrewed and sold commercially across the globe!
I must admit, Kombucha was not something I was familiar with until Raw Culture appeared on the scene.
